Is a baked potato good for you?

In addition to carbohydrates — a needed energy source for your body and brain — potatoes contain a wealth of micronutrients. They’re a good source of vitamins, minerals and fiber. As a bonus, potatoes are low in calories, contain no fat or cholesterol, and are sodium-free.

What happens when you bake a potato?

When you bake a potato, the starch granules absorb the moisture within the potato. Within the confines of the potato skin, moisture soon turns to steam that expands with great force, separating the starch granules and making a fluffy baked potato.

Can I overcook a baked potato?

Visual signs: The potato skin will start to wrinkle when over cooked. The potato, when wrapped in foil or placed on the bottom of a pan will have a dark brown spot on the bottom, a sure sign of over cooking. Foil traps the moisture in the potato causing the skin to be wet and the inside flavourless or gummy.

Reasons why a baked potato may still be hard after an hour of baking:

  1. The potato may be too big: If the potato is too large, it will take longer to bake all the way through. It’s best to choose potatoes that are similar in size, around 6-8 ounces each.
  2. The oven temperature may be too low: If the oven temperature is too low, the potato will take longer to cook. Make sure the oven is preheated to the correct temperature before baking the potato.
  3. The potato may not be pricked or scored enough: Poking the potato with a fork or scoring it with a knife is important to allow steam to escape during baking. If there are not enough holes or scores in the potato, the steam may build up and cause the potato to cook unevenly.
  4. The potato may not be wrapped or oiled: Wrapping the potato in aluminum foil or brushing it with oil before baking helps to lock in moisture and create a crispy skin. If the potato is not wrapped or oiled, it may dry out or become tough.
  5. The potato may not have been baked for long enough: Some potatoes may take longer than an hour to bake all the way through, depending on their size and the oven temperature. Check the potato for doneness by piercing it with a fork or a knife. If it’s still hard, put it back in the oven and continue baking, checking for doneness every 10-15 minutes.
