This dish is great because it can be prepared quickly in only 55 minutes using just one pot. I appreciate the fact that the noodles can be cooked together with the other ingredients, eliminating the need for an extra pan. This makes it ideal for hectic weeknights.
Key Ingredients
- Ground beef: The meat used in this recipe forms the foundation of the dish and contributes delicious taste. Ground turkey or ground pork can be used as an alternative.
- Elbow macaroni noodles: If you don’t have these on hand you can use another small noodle like small shells or ditalini.
- Beef broth: You can also use a vegetable or chicken broth if that’s all you have on hand.
- Tomatoes: This recipes uses tomato sauce along with petite diced tomatoes.
- Vegetables: Add in onion, bell pepper and mushrooms. Mushrooms are fungi but are counted as vegetables and are an important source of nutrients and bioactive compounds.
- Seasonings: Lots of great seasonings to add great flavor to this goulash recipe.
How to Make Goulash
- SAUTE. In a skillet cook the beef, onion, peppers and mushrooms in large pot until brown (about 3-5 minutes) over medium-high heat. Drain the grease, then add in garlic, Italian seasoning, seasoned salt and Worcestershire sauce. Cook for 1-2 more minutes.
- SIMMER. Stir in diced tomatoes, corn, broth and tomato sauce and bring to light simmer. Then add in noodles, stir and cover with lid.
- COOK. Continue to cook for 10-12 minutes, or until noodles are tender.
- TOP. Salt and pepper to taste. If desired, sprinkle with cheese and cover for about 1 minute, until cheese has melted. Then top with fresh basil or parsley.
TIP: Stir goulash every couple of minutes so that the noodles don’t stick!

What is Goulash?
There are two types: Hungarian goulash and American goulash. Goulash originated in Hungary and is traditionally a hearty stew that consisted of cubes of meat, vegetables and spices (usually including paprika).
American goulash has more of a tomato base and typically includes ground beef and macaroni noodles as well. This recipe is considered an American goulash.
Variations
- Leaner: Use ground turkey in place of the ground beef to make this a leaner meal.

- Storing: Place any leftovers in an airtight container and store in the fridge for about 3 to 4 days. To reheat, simply microwave or heat on stove until warmed throughout.
- Freezing: Take an 8×8″ metal tin and cover it with foil before placing it inside a ziptop bag. Don’t forget to attach a freezer label indicating the date. When ready to eat, place in the refrigerator to thaw overnight and then cook at 350°F for 30-45 minutes, or until hot.

Ingredients
- 2 pounds ground beef
- 1 large onion chopped
- 1 green pepper chopped
- 8 ounces fresh mushrooms sliced
- 4 cloves of garlic minced
- 3 cups water
- 1 can 29 oz. tomato sauce
- 1 can 28 oz. diced tomatoes, undrained
- 1 tablespoon Italian seasoning
- 1 teaspoon paprika
- 1 teaspoon sugar
- 1 teaspoon crushed red pepper flakes
- 1-2 tablespoons Worcestershire sauce
- Salt and pepper to taste
- 2 1/2 cups uncooked elbow macaroni
Instructions
- In a 5 quart pan, cook and crumble beef over medium-high heat until no longer pink.
- Add the onion, green pepper, and mushrooms. Cook until tender, about 3-5 minutes. Drain if desired.
- Add beef mixture back to the pot and add garlic, water, tomato sauce, tomatoes, Italian seasoning, paprika, sugar, crushed red pepper flakes, Worcestershire sauce, salt, and pepper.
- Bring to a boil, cover and reduce heat to medium-low. Allow to simmer for 15-20 minutes.
- Add the elbow macaroni and stir well. Return lid and continue to simmer for 15 minutes or until the noodles are done.
- Allow to sit covered for 5-10 minutes and mix well before serving.
